Two Healthy Chicken Breast Recipes To Mix It Up At Dinnertime

Chicken is probably the most consumed meat in my house. No matter how I cook it, it's usually a big hit. But as much as we love the classics, it's a new year. Time to spice it up! If you're looking to add some delicious healthy chicken breast recipes into your weekly repertoire, here are a few home runs that'll do the trick.

Almond Crusted Chicken Fingers:
Ingredients:
1 pound chicken cutlets or breasts
Honey Dijon mustard
3 tbsp. olive oil
2 cups of almonds crushed

Chicken Breasts with Artichokes:
1 pound chicken cutlets or breasts
½ cup breadcrumbs
½ cup grated cheese
1 wedge of garlic
¼ cup olive oil
Salt/Pepper
1 can chopped artichokes (or you can sub in broccoli or spinach)

Directions: 
In a mixing bowl mix together breadcrumbs, grated cheese, olive oil, salt/pepper, chopped artichokes. Lay the chicken on a baking sheet and top with the mixture. Bake in preheated oven 350 degrees for 25 minutes or until chicken is cooked through. This recipe can be modified and use a broccoli or spinach instead.
