Beyoncé Has Us Craving These Easy Vegan Cookies
How does Queen Bey reward herself after casually making pop culture history? Why, by chowing down on some vegan cookies, of course. December 13, 2013 was a big day for the famed songstress. Just a few hours after her midnight surprise release of Beyoncé, a visual album complete with 14 new songs and 17 music videos—which sold just a hair under a million copies within the first 10 days of its release—Blue Ivy’s mama also performed her 100th show.
And, like us, Beyoncé fêted her successes with a mountain of baked goods. Following in the footsteps of stars like Nicole Richie, she and husband Jay Z (who, along with little Blue, makes several adorable cameos on the album) maintained a strict vegan diet throughout the month of December. They’ve since reincorporated some meat into their routine, but on the Friday in question Bey’s desserts were animal-product free.
The style and music icon, well known for her avid social media presence even before she decided it was the sole means by which she’d promote her latest album, of course posted mouth-watering snaps of her celebratory vegan cupcakes and cookies on Instagram.
...Which inevitably gave us a hankering for dark chocolate chips. Sweet teeth aching, we quickly scoured the web for some easy vegan cookies we could whip up in next to no time. Raw Vegan Chocolate Chip Cookie Dough Bites (gluten-free, soy-free)
2/3 cup raw cashews
1/3 cup oats
2 tbsp. agave
1 tbsp. maple syrup
1 tsp. vanilla extract
1/4 cup chocolate chips

1/3 cup Dutch-process cocoa powder
1/4 cup unsweetened almond milk
1/4 cup coconut oil
1/4 cup almond butter

1/2 teaspoon vanilla extract
1/8 teaspoon salt
